Cooperation

New Hope, Pemba

At the New Hope Cooperative on Pemba, one of Zanzibar’s main islands, a group of farmers have joined forces to create an additional source of income through salt production. This is where we source our salt – straight from the Indian Ocean.

Salt production

To extract the salt, seawater is channelled into large basins at the edge of the mangrove coast at high tide. In these basins, some of the water evaporates and the water with a higher salt concentration is channelled into further basins. There, the process is repeated until the salt in the water in the harvesting basin reaches a concentration of around 25 per cent and precipitates as crystals. It is then harvested by hand, cleaned and finally dried in the sun.
